So I’ve been going live on social media sharing the recipes my family loves for over three years now. I love sharing these recipes because I get it, as a busy working mom– you don’t have a ton of time to spend in the kitchen.
Anyway a few weeks ago, our internet was acting squirrely so I made a post asking my followers what their favorites are. And if you’re like me, your brain is tired and you don’t want to think about your dinner plans each night this coming week.
So I rounded up 5 of my fan favorites just for you! These recipes are low carb, nutritious and something your whole family will love. Trust me on this.
First up, lasagna. Hear me on this, this is not like those zucchini lasagnas. Nope. Way better!
- 2 1/4 lb ground beef (or other ground meat of choice)
- Jar of low sugar marinara sauce
- 1 bell pepper chopped
- 1 yellow onion chopped
- 1 Tbsp butter
- 2 Joseph’s Lavash bread flatbreads (low carb wraps)
- 1-1 1/2 lb mozzarella cheese, shredded
- 1 cup Parmesan cheese, shredded
- Salt and pepper
- Italian seasoning
- Preheat the oven to 425 and spray a clear 8×12 pan.
- Melt butter in a separate pan and add in onions and bell pepper and soften. Then add in ground beef and brown.
- Season with salt and pepper.
- Drain the grease off and place back into the pan with no more heat.
- Add in the jar of marinara and combine.
- Layer in this order: “noodle” (Lavash), cheese, meat filling, cheese, “noodle,” cheese, meat filling, cheese.
- Sprinkle some Italian seasoning on top and bake for 10 minutes.
- Let cool and cut to serve!
Next up, the easiest crispy chicken wings in the oven! I’m not even kidding.
- Equal parts: baking powder, paprika, salt, pepper, onion powder, garlic powder
- (I also added Texas Pete Original Dust dry seasoning)
- And chicken wings!!
- Preheat your oven to 425 degrees.
- Combine all your spices in a bowl.
- Pat dry your wings with a paper towel and then roll around in the dry rub.
- Line them on a baking sheet covered with parchment paper and then a cooling rack on top. (protects the chicken from sitting in the grease and getting mushy)
- Bake for 25 minutes on one side, then flip and cook for an additional 25 minutes on the other side.
- You can add a wet sauce after removing them from the oven or enjoy just like this.
Next on this list, we have Egg Roll in a Bowl. Minimal prep and super simple ingredients. Dinner can be done in 15 minutes!
- 1lb ground pork
- 6 cups coleslaw mix
- 4 cloves minced garlic
- 1 Tbsp ground ginger
- 1 Tbsp soy sauce
- 1/4 cup green onions
- 1 Tbsp sesame oil
- Heat skillet to medium and cook ground pork until done.
- Do not drain the fat.
- Add coleslaw mix, garlic, ginger and soy sauce then cook for 3-4 minutes.
- Top with onions and drizzle with sesame oil.
Oh gosh this next one’s to die for. Especially if you’re an Outback fan- Alice Springs Chicken.
- 2 cups sugar free honey mustard
- 12 oz bacon, cooked and crumbled
- Chicken breasts (thin)
- 8 oz mushrooms, chopped
- 2 cups shredded cheese
- Garlic powder
- Paprika
- Salt and pepper
- Green onions, sliced
- Preheat the oven to 350 degrees.
- Cook your bacon and set aside for crumbling.
- Sprinkle chicken with seasonings and cook 5 min per side in the bacon grease.
- Place in baking dish.
- Add mushrooms to a small skillet with some olive oil (or a bit of the bacon grease) and cook for about 5 minutes. Then set aside.
- Pour half the honey mustard over the chicken, then top with the mushrooms and cheese, and finally the crumbled bacon.
- Bake for about 20 min.
- Top with green onions and serve with additional honey mustard for dipping.
And it would totally be wrong of me not to mention something sweet here. Check out my Chocolate Fudge.
- 1/2 cup coconut oil
- 1/2 cup sugar free chocolate chips
- 1/2 cup cashew butter
- Melt all ingredients and combine until smooth.
- Pour into a small casserole dish lined with parchment paper.
- Refrigerate until set and then cut into squares.
- Store in a container with a lid in the refrigerator.
There you have it! The thing I think I love most about these recipes (outside the fact that they are nutritious, tasty and take little time to make), is that you can adjust any of them to suit your tastes! If you tweak anything, I’d love to hear from you and how it went.
