I don’t know about you, but sometimes I get tired of making the same things over and over. I’ve found myself saying– I wish they made different foods.
Well, they do.
Let’s cut to the chase…You know one of my passions is food, and I like it to be simple, but also healthy. So here’s a list of six different things you can make for dinner right now that are low carb and delicious!
Grilled Lemon Herb Chicken: Marinate chicken breasts in a mixture of fresh lemon juice, olive oil, minced garlic, dried herbs (such as rosemary, thyme, and oregano), salt, and pepper. Grill until cooked through and serve with a side of steamed vegetables.
Chicken Stir-Fry with Vegetables: Sauté chicken strips with a variety of colorful vegetables like bell peppers, broccoli, mushrooms, and snap peas. Season with low-sodium soy sauce, minced garlic, ginger, and a sprinkle of red pepper flakes.
Chicken Zucchini Boats: Slice zucchini in half lengthwise and scoop out the center to create a hollow “boat.” Fill the zucchini boats with cooked chicken, diced tomatoes, spinach, and shredded mozzarella cheese. Bake until the zucchini is tender and the cheese is melted and bubbly.
Chicken Lettuce Wraps: Sauté ground chicken with diced onions, minced garlic, and grated ginger. Add soy sauce, sesame oil, and a touch of honey or a low-carb sweetener. Serve the flavorful chicken mixture in lettuce cups and garnish with chopped green onions and crushed peanuts.
Baked Caprese Chicken: Top chicken breasts with slices of fresh mozzarella cheese, tomato, and basil leaves. Drizzle with olive oil and sprinkle with salt and pepper. Bake until the chicken is cooked through and the cheese is melted and golden.
Chicken Cauliflower Fried Rice: Pulse cauliflower florets in a food processor until they resemble rice. In a large skillet, cook diced chicken with diced onions, minced garlic, and your choice of low-carb vegetables like carrots, peas, and bell peppers. Add the cauliflower rice and season with soy sauce, sesame oil, and scrambled eggs for a tasty and satisfying low-carb “fried rice” alternative.
